This Rooibos Tea Chai is the perfect way to enjoy the bold, warming spices of chai without the caffeine, while still getting a satisfying, comforting cup of tea. It's one of my favorite teas to serve to my friends when they come over, and to the members of my meditation group after we've finished meditating together on Sunday afternoons.
Preferably use filtered water to make this tea and every other type. As you know, tea is mostly made of water so you want to use the very best quality water you can. You can also bless your water and say lovely words to it. This will raise its frequency, and improve its taste. See here for info on Dr Emoto's water research.
Ingredients:

1 cup water

1 cup milk (or dairy-free alternative like almond, oat, or coconut milk)

1 tablespoon loose-leaf organic rooibos tea. You can also use Tea of Light's Courage blend for ultra good taste and positive energy.

1 cinnamon stick

1 whole cloves

2 cardamom pods, lightly crushed

1 slice fresh ginger (about 1 inch thick)

1 teaspoon honey, maple syrup, or sweetener of choice (optional)
Instructions:

Prepare the Spice Blend: In a small pot, add the water, cinnamon stick, cloves, cardamom pods, and fresh ginger. Bring to a gentle simmer over medium heat, letting the spices steep and infuse for about 5 minutes.

Add Organic Rooibos Tea: Add the rooibos tea to the pot, either the loose-leaf or the tea bag. Continue to simmer for another 3-5 minutes, allowing the rooibos to brew and absorb the spicy, aromatic flavors.

Add Milk: Pour in the milk (or your preferred dairy-free milk) and bring the mixture to a low simmer. Allow it to heat up for 2-3 minutes, but don't let it boil over.

Sweeten (Optional): If you'd like to sweeten your chai, add honey, maple syrup, or your preferred sweetener to taste. Stir until well combined.

Strain and Serve: If you used loose-leaf rooibos, strain the tea into your favorite mug. If you used a tea bag, simply remove it. Pour the spiced, creamy rooibos chai into your mug and enjoy!
